XOXO Sheet Pan Nachos

This might just be the easiest way to make a Valentine’s Day themed lunch or dinner. Sheet Pan Nachos are easy enough for older kids to make and so delicious.

Nachos…on a sheet pan?

You heard me right. My FAVORITE way to make nachos has nothing to do with a microwave and everything to do with my oven. I actually don’t own a microwave (mostly because I don’t have the countertop space for it!) so I occasionally have to get creative for cooking things that you automatically think of a microwave for. I grew up making microwave nachos regularly. (like every day after school in high school) So one of the things that came with adulthood was figuring out how to make nachos in an oven.

Crispy, Crunchy, and oh so good

The oven is the perfect vessel for making nachos because it perfectly crisps your chips while slowly melting the cheese. Simply layer your toppings, bake onto a sheet pan and serve. Done. It couldn’t be easier!

I also like that you can fit MORE nachos on a sheet pan making it a perfection option for the big game or watching an awards show. Sheet Pan Nachos feed a lot of people and trust me, they are thrilled when a big pan of nachos emerges from the oven. My favorite sheet pans right now are either these from OXO or these from Nordic Ware (see my review for Nordic Ware Non-Stick Sheet Pans here!). Whatever sheet pan you use, these nachos are simply a crowd pleaser.

Call me cheesy (see what I did there…), but I also love that you can literally shape these nachos into anything. In this case, I wanted to do X’s and O’s for Valentine’s Day. But I could have just as easily done a big heart. For a birthday party you could do initials, for Easter you could do an easter egg. The options are limitless!

Description

This might just be the easiest way to make a Valentine’s Day themed lunch or dinner. Sheet Pan Nachos are easy enough for older kids to make and so delicious.


Ingredients

Scale
  • 12 ounces tortilla chips
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grape tomatoes, quartered
  • 1/4 cup diced red onion
  • 1 avocado, diced
  • 2 tablespoons chopped fresh cilantro leaves
  • salsa, for serving

Instructions

  1. Preheat oven to 400 degrees F. Lightly spray a sheet pan with non-stick spray. (or use a non-stick sheet pan)

  2. Place tortilla chips in a single layer onto the prepared baking sheet. Top with cheese and black beans.

  3. Place into oven and bake until heated through and the cheeses have melted, about 5-6 minutes.

  4. Serve immediately, topped with tomatoes, onion, avocado, cilantro and salsa,
