WATERMELON AND TOMATOES
This recipe embodies all the flavors of a summer salad in one bowl. When I went to post this recipe, I searched for the origins of the Watermelon and Tomato salad, and I could not come across a good source. Whoever invented it though, hats off to you. The combination of plump, sun-ripened tomatoes, with juicy, crisp watermelon swirled together create an experience that is savory, yet sweet, light and fresh, but also satisfying for any summer day- or night occasion.
THE GIST
I love to both prepare and to serve this summer salad because of the way it spotlights Mother Nature’s simplicity; ie, it’s easy to make, and it’s healthy. Essentially, you are offering up a platter of Nature’s best fruits of the summer. (And here is where I will spare the reader any controversial discussion about the tomato’s ambiguous Fruit of Vegetable classification. But in my opinion, it’s definitely a vegetable, because it tastes like one). A light dressing made up of apple cider vinegar, both lemon juice and zest, and olive oil is drizzled over the top of the two sliced up summer delicacies combined with some crumbled feta cheese and fresh Basil leaves. Season that combo with some salt and freshly cracked pepper and BAM –– you have a Watermelon Tomato and Feta Summer Salad, my friend!
THE OCCASION
This salad has been an excellent choice to bring for any kind of party or shower of sorts. It’s a breath of fresh air from the usual potluck side/salad offerings- and the unusual combo is just the right kind of wow factor or conversation starter I’m going for in any of those settings. It’s also delicious both cold- or at room temperature, and hence is easy to transport and serve at a picnic or summer function out of your home.

Watermelon Tomato and Feta Summer Salad

Description
Watermelon and tomatoes drizzled in a lemon vinaigrette combined with crumbled feta cheese and fresh Basil
Ingredients
- 2 Tbsp apple cider vinegar
- 1/2 tsp grated lemon zest
- 1 Tbsp lemon juice
- 1/4 cup olive oil (plus more for drizzling)
- 3 each Large heirloom tomatoes (quartered )
- Kosher salt
- Cracked Black Pepper
- 4 cups seedless watermelon (cut into 1–2 inch cubes)
- 6 oz feta cheese
- 1/4 cup Fresh Basil Leaves (torn)
Instructions
- In a large mixing bowl whisk together vinegar, lemon zest and juice and ¼ cup olive oil.
- Season with 1/2 teaspoon salt, and 1/4 teaspoon pepper.
- Add tomatoes and toss gently to combine.
- Transfer watermelon and tomatoes to platter or serving bowl. Evenly scatter feta and basil over top.
- Drizzle with extra oil and season with salt and pepper to taste. Serve.
