Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 yellow onion diced
  • 2 tablespoons taco seasoning
  • 1 can diced tomatoes with green chiles
  • 1 can black beans
  • 1 cup corn kernels

Instructions

  • Heat a large skillet over medium-high heat, add 1 tablespoon olive oil and swirl to coat the bottom of the pan. Add 1 pound ground turkey and cook, breaking it up into small pieces with the back of a spoon.
  • Add 1 yellow diced onion to the skillet with the turkey and continue cooking until the onions are soft.
  • Stir in 2 tablespoon taco seasoning, and cook for an additional 1-2 minutes.
  • Add 15 ounce can black or pinto beans to the skillet with 10 ounce can diced tomatoes + green chiles (with juices) and 1 cup fresh or frozen corn. Stir the ingredients in the skillet to combine, then heat through over medium-high heat.
  • Serve turkey taco mixture over Cilantro Lime Rice, topped with Pickled Onions. Alternatively, serve as taco filling in tortillas.

SERVING SUGGESTIONS

  • Serve this over Cilantro Lime Rice with fresh pineapple or mango or chips and guac on the side.

  • Protein: Swap ground turkey for ground beef or chicken.

  • Turkey Taco Mixture can be prepped fully in advance and reheated in a skillet before serving. Store in an airtight container in the refrigerator.
