  • 1 tablespoon olive oil
  • 1 lb. ground turkey
  • 1 yellow onion, diced
  • 2 tablespoons taco seasoning
  • 1 (10 oz.) can diced tomatoes with green chiles
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 cup corn kernels
  • pickled onions, for serving
  • cilantro lime rice, for serving


  • Heat a large skillet over medium-high heat, add 1 tablespoon oil and swirl to coat the bottom of the pan. Add 1 lb. ground turkey and cook, breaking it up into small pieces with a spoon.
  • Add 1 diced onion and continue cooking until the onions are soft. Stir in 2 tablespoon taco seasoning, and cook for an additional 1-2 minutes.
  • Add 1 can beans, 10 oz. diced tomatoes with green chiles and 1 cup corn. Stir the ingredients to combined and heated through.
  • Serve turkey taco mixture over cilantro lime rice, topped with pickled onions. Alternatively, serve as taco filling in tortillas.


  • My Favorite Taco Seasoning:
    1 tablespoon chili powder
    1 teaspoon ground coriander
    1 teaspoon ground cumin
    ¼ teaspoon cayenne pepper (optional)
    ½ teaspoon kosher salt
    ¼ teaspoon freshly cracked black pepper


  • Serve this over Cilantro Lime Rice with fresh pineapple or mango or chips and guac on the side to complete this meal.


  • Protein: Swap ground turkey for ground beef, chicken or pork.
  • Vegetarian: A great plant based protein swap is the Beyond Beef Ground/Crumbles.
  • Gluten-Free: If serving with tortillas select corn tortillas or gluten-free tortillas.
  • Cilantro: Swap the cilantro for ½ bunch sliced scallions.


  • Turkey mixture can be made up to 3 days in advance and reheated in a skillet before serving. Store in an airtight container in the refrigerator.
