Thai Crunch Salad

If you’re looking for an easy weeknight salad that can pass for dinner, look no further! With the help of a salad kit and a rotisserie chicken you can have dinner on the table in minutes.

The flavors in this salad are a match made in heaven. Inspired by one of my favorite salads and go-to orders at CPK, I wanted to recreate this at-home version that I could throw together for a last minute dinner.
It’s no secret that I’ve become a BIG fan of grocery delivery and pick-up recently. Every other week I consistently do a Costco delivery order via instacart and this is one of those recipes where I can get nearly everything for the recipe with my order and I instantly have ingredients for dinner delivered.
Shortcut Recipes
Taking full advantage of a few shortcut ingredients – like a bagged salad kit and ready-to-go rotisserie chicken make this recipe even more doable.
The crunchy combo of greens, wontons, and sesame seeds, is super delicious paired with the buttery avocado and edamame. I like tossing it with the sesame dressing the bagged salad comes with and adding a simple peanut sauce to drizzle over the top. The peanut sauce isn’t necessary, but most certainly adds an extra oomph!
When it comes to using salad kits to inspire an easy mid-week meal you can really choose-your-own-adventure. It’s a great way to utilize a base to build dinner off of. I find myself doing this at least a few times a month. It’s easier than grabbing take-out on a busy weeknight and much healthier to boot. I hope you end up loving this super-fresh salad as much as I do!

Thai Crunch Salad

Description
Crisp, crunchy, and oh so tasty! Try my super simple Thai Crunch Salad recipe that uses two shortcut ingredients from the grocery store making this recipe doable in 15 minutes or less.
Ingredients
- 1/2 rotisserie chicken, shredded
- 1 (24 oz.) Asian Chopped Salad Kit
- ½ cup edamame, shelled
- 1 avocado, diced
- ¼ cup peanuts, chopped plus more for garnish
Peanut Sauce
- ¼ cup smooth peanut butter
- 3 tablespoons cup low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon chili garlic sauce
- 1 tablespoon sugar
- 2 tablespoons water
Instructions
Break down rotisserie chicken and shred into bite-sized pieces.
Toss Asian Salad Kit in a large mixing bowl. Top with edamame, avocado, and peanuts and toss to combine.
For peanut sauce: In a food processor or blender, combine peanut butter, soy sauce, rice wine vinegar, chili garlic sauce, sugar, and water and blend until smooth.
Drizzle peanut sauce over salad and garnish with additional chopped peanuts, if desired.
Notes
I prefer the Taylor Farms Asian Chopped Salad Kit, but any brand should work well. To simplify even further, you could use a store bought peanut sauce as well.
