Super Summer Sides Round-up

Here’s a round-up of my favorite summer sides to beat the heat! Most of these are salads, with a slaw thrown in for good measure! If this feels like too much, don’t ever underestimate the power for diced watermelon or buttered corn on the cob. Those are the two most popular summer sides at our house!
Fresh Fruit Salad with Honey Lime Dressing
Jazz up that traditional fruit salad with a simple Honey Lime Dressing. It’s so simple and adds just a little something different. Perfect for a picnic or a potluck!
Watermelon Feta Salad

This classic summer ingredient combo is super delicious tossed into a cool and refreshing salad. A handful of fresh berries tossed in there is super delicious as well. It’s a stunner in the bowl and a huge crowd pleaser.
Peach Salad with Tomatoes, Feta, and Basil Vinaigrette
Arguably the MVP of summer fruit – this is my FAVORITE way to enjoy peaches during the summer months. With garden tomatoes, feta, and a basil vinaigrette, this salad simply can’t be beat.
Bowtie Caesar Salad
I’m not above a bagged salad and often pick up a Caesar Salad Kit at the grocery store every week. One way to make it a bit heartier, possibly even passing for a meal, is to add a box of bowtie pasta to the mix. With halved grape tomatoes, good croutons, and a squeeze of fresh lemon, it’s a winner.

Rainbow Slaw
For a slaw that looks as good as it tastes, make this colorful recipe. It’s sweet yet tangy and I love using it on pulled pork sandwiches for an extra crunch.
