sweet potato gnocchi and sausage

  • 1 (12 oz.) package cooked sweet Italian chicken sausage, sliced
  • 2 (14 oz.) bags frozen Trader Joe's sweet potato gnocchi
  • ½ pint grape tomatoes
  • 1 tablespoon olive oil
  • kosher salt and cracked black pepper
  • ½ cup Trader Joe's kale, cashew & basil pesto
  • cup grated Parmesan


  • lemon, for serving
  • fresh basil, for serving


  • Preheat oven to 450°F and arrange a rack in the middle of the oven.
  • Line a sheet pan with parchment paper then add 12 oz. sliced chicken sausage, 2 bags sweet potato gnocchi, and ½ pint grape tomatoes. Drizzle or spray with 1 tablespoon oil, season with a big pinch salt and pepper; toss to coat.
  • Spread in an even layer and roast until the gnocchi is plump and the sausage is beginning to brown, about 15 minutes.
  • Drizzle with ½ cup pesto and toss to coat. Garnish with ⅓ cup grated Parmesan.
  • If desired, finish with a squeeze of lemon, and torn fresh basil.


  • Serve with a Caesar salad kit and crusty bread to complete this meal.


  • Protein: Swap Sweet Italian Sausage for Garlic Herb Sausage.
  • Vegetarian: Omit sausage for 1 can chickpeas, drained and rinsed or 2 small diced sweet potatoes.
  • Gluten-Free: Swap gnocchi for 2 small diced sweet potatoes.
  • Gnocchi: Swap sweet potato gnocchi for regular or cauliflower gnocchi.
  • Pesto: Swap Trader Joe's Kale, Cashew & Basil Pesto for regular store-bought pesto.
