sheet pan gnocchi and veggies

  • 1 lb. potato gnocchi
  • 2 bell peppers, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch chunks
  • 1 yellow squash, cut into 1-inch rounds
  • 2 tablespoons olive oil
  • kosher salt and cracked black pepper
  • 2 tablespoons prepared pesto
  • ½ lemon, zest and juice
  • grated Parmesan cheese, for serving


  • Preheat oven to 425°F. Line a sheet tray with aluminum foil or use a nonstick sheet tray.
  • Place on the prepared sheet tray, 1 lb. gnocchi, 2 bell peppers cut into chunks, 1 red onion cut into chunks, and 1 yellow squash cut into rounds. Drizzle with 2 tablespoons oil and season liberally with salt and pepper. Toss to fully combine and spread evenly on sheet tray.
  • Roast, stirring halfway through, until gnocchi are plump and vegetables are tender, about 15-20 minutes. Meanwhile, combine in a small bowl 2 tablespoons pesto,  juice and zest from ½ lemon; set aside.
  • Remove from oven and carefully drizzle pesto lemon mixture over veggies and gnocchi; mix to evenly coat.
  • For serving, spoon the gnocchi and vegetable mixture into individual bowls and garnish each bowl with fresh basil and grated Parmesan, if desired.


  • Serve gnocchi and veggies with crusty bread and a big green salad to complete this meal. 


  • Protein: Serve with a rotisserie chicken or reduce vegetables and add cut sausage to the sheet tray.
  • Veggies: Substitute the zucchini for yellow squash. Grape tomatoes are also great in this recipe.
