Looking for a fun way to spend one of those relaxing Friday evenings? A way to bring the family together? A Pita Pizza Party will do all of those things. AND- it will feed your people with a delicious and nutritious dinner.
PITA PIZZA PARTY
Here’s the beauty of Pita Pizza Parties: NO dough. You skip the often lengthy process of pizza dough making entirely. But you still end with a result that is a winner: personalized, savory flatbread pizzas which everyone can enjoy. Just toss a couple of bags of fresh, fluffy pita bread into that shopping cart next time you are at the grocery store and half the work is already done. Also, with the variety of ideas in this recipe, you can have options for a large group of hungry people. No one will get bored with these pita pizzas. I have included some of the best recipes I’ve tried: Greek Pita Pizza, BBQ Sweet Pork And Peach Pita Pizza, and Caprese Pita Pizza. But you can always get creative with the array of possibilities of toppings and sauces!
HOT AND CRISPY
With any recipe of Pita Pizza, I like to crisp the pita bread before adding additional toppings by brushing the tops of the pitas with some olive oil, seasoning them with some kosher salt and freshly cracked black pepper, and then roasting them in the oven for just a few minutes while I design the assembly line of toppings for my crowd of people. Not only does this infuse the pita with a little extra flavor, but it will also help them to hold up against some of the juicier ingredients.
GREEK PITA PIZZA
This combo is zesty and satisfying. Whisk together a vinaigrette of olive oil, red wine vinegar, kosher salt, and cracked black pepper. Drizzle some of the vinaigrette over the thinly sliced red onions and olives. Spread your favorite hummus over the crisped pita, and layer the onions, olives, a handful of shredded Italian cheese blend, feta cheese, and lastly, the arugula. Finish with a final drizzle of the vinaigrette.
BBQ SWEET PORK & PEACH PITA PIZZA
This is an unusual combo that is not only delicious but also screams the flavors of summer. Layer the crisped pita bread with some shredded Italian cheese, pulled pork with BBQ sauce, fresh peaches, and thinly sliced red onions. Roast in the oven until the cheese has melted then top it off with some fresh cilantro.
CAPRESE PITA PIZZA
For this Italian classic, layer the crisped pita bread first with some shredded Italian cheese blend, and some chopped fresh mozzarella. While roasting the pizza of cheeses, combine the halved heirloom tomatoes in olive oil, red wine vinegar, kosher salt, and cracked black pepper. Lastly, layer the fresh arugula and heirlooms tomatoes over the hot pizzas. Enjoy!

Ingredients
- 4 tablespoons extra virgin olive oil
- 5 8-inch pita breads
- 2 tablespoons red wine vinegar
- Kosher salt and cracked black pepper
- 1 red onion (thinly sliced)
- ½ cup pitted olives
- ½ cup hummus
- 1 cup shredded Italian cheese blend
- 1 cup feta cheese (crumbled)
- 2 cups arugula
Instructions
- Adjust oven rack to middle position and heat oven to 475 degrees. Brush 2 tablespoons oil over top and bottom of pita breads. Transfer to baking sheet and bake until golden, about 5 minutes.
- Meanwhile, combine remaining oil, vinegar, and salt and pepper to taste in bowl. Toss onion, olives, and 2 tablespoons vinaigrette together in separate bowl.
- Spread 2 tablespoons hummus on each toasted pita round. Sprinkle cheeses evenly over hummus, then top with onion mixture. Bake until onions soften and cheese is melted, 6 to 8 minutes. Just before serving, toss arugula with remaining vinaigrette. Arrange arugula on top of pita pizzas. Serve.
BBQ SWEET PORK & PEACH PITA PIZZA
- Yield: 4 1x

- ½ cup BBQ sauce (divided)
- 1 cup shredded Italian cheese blend
- 1 cup pulled pork
- Fresh peach slices
- 1 red onion (thinly sliced)
- Cilantro (for garnish)

- Adjust oven rack to middle position and heat oven to 475 degrees. Brush 2 tablespoons oil over top and bottom of pita breads. Transfer to a baking sheet and bake until golden, about 5 minutes.
- Spread 2 tablespoons BBQ sauce on each toasted pita round. Sprinkle cheese evenly over sauce and bake until cheese is melted, 6 to 8 minutes. Just before serving, top with fresh peaches, sliced red onion and cilantro. Serve.
CAPRESE PITA PIZZA

- ½ cup prepared pesto
- 1 cup shredded Italian cheese blend
- 2 tablespoons red wine vinegar
- Kosher salt and cracked black pepper
- Heirloom tomatoes (halved)
- 1 cup mozzarella cheese (diced)
- 2 cups arugula
Instructions
- Adjust oven rack to middle position and heat oven to 475 degrees. Brush 2 tablespoons oil over top and bottom of pita breads. Transfer to a baking sheet and bake until golden, about 5 minutes.
- Spread 2 tablespoons pesto on each toasted pita round. Sprinkle cheese evenly over sauce. Bake until cheese is melted and warmed through, about 6 to 8 minutes.
- Meanwhile, combine remaining oil, vinegar, and salt and pepper to taste in a bowl. Toss tomatoes, mozzarella, and arugula together in a separate bowl.
- Just before serving, top with tomato, mozzarella, and arugula.
