orange chicken + broccoli

Ingredients

  • 1 package mandarin orange chicken
  • 1 bag broccoli florets
  • 1 red bell pepper large dice
  • 3 cups white rice
  • 2 green onions sliced thin for garnish

Instructions

  • Pre-heat oven to 400°F. Spread 1 bag orange chicken evenly on sheet tray and cook for 10 minutes. In the meantime, prep broccoli and bell pepper.
  • Remove sheet tray from oven and evenly scatter 1 ½ cups broccoli and 1 chopped bell pepper on tray, tossing with the chicken. Return to oven and cook for an additional 10 minutes of cooking.
  • In the meantime, prepare the rice on the stovetop, in a rice cooker, or in a microwave. Cook according to package directions.
  • In a large skillet over medium-high heat, warm the orange sauce from the package.
  • Once the chicken and veggies are done cooking, carefully transfer tothe skillet and toss to coat with the sauce.
  • Serve chicken and veggies over cooked rice garnished with thinly sliced green onions and orange juice and zest just before serving.
