Mediterranean Chopped Chicken Salad

Nothing gets me more excited then taking a boring salad kit and turning it into something delicious! This Mediterranean Chopped Chicken Salad is exactly what I make when I want something yummy and flavorful but is also super easy to pop on the table for a weeknight family dinner!

MEDITERRANEAN DREAMS
I live for mediterranean food! Every ingredient goes together with purpose and is always insanely fresh and full of flavor. It’s something I constantly crave, especially after a weekend of maybe not getting to eat all the vegetables I should have. I always try to incorporate some sort of mediterranean inspired meal at the beginning of the week, especially this Mediterranean Chopped Chicken Salad. I love that it’s packed full of vegetables and protein and just makes you feel good when you’re eating it. It’s definitely one of my favorites for those busy nights when you’re trying to get dinner on the table but still want to serve something that is just so filling and packed with flavor.
CAN I UPGRADE YOU?
My all time favorite dinner hack is a salad kit upgrade. You can take any store bought salad kit and make it 100 times more delicious with just a few easy steps. This salad is definitely on the top of my list. All you need is your favorite mediterranean salad kit and a few simple ingredients to add that extra goodness. After you’ve grilled your chicken skewers and cut up your additional veggies you will add your quinoa/rice packet. These are amazing because they take minimum time and effort but will upgrade your salad to a meal that will be much more filling!
CHOP CHOP CHOP
The key to any good chopped salad, but especially this salad is to finely chop all of your add-ins. Especially your chicken! A nice rough chop of the chicken will break it up easier giving you more bang for your buck. By chopping everything up nice and fine then you’re guaranteed to get everything in one bite which will give you the optimum flavor and in my opinion, is the best way to eat any salad.

Mediterranean Chopped Chicken Salad

Description
One of my favorite weeknight easy dinners. Makeover a salad kit and you’ve got an easy family dinner in no time!
Ingredients
- 4 grilled Mediterranean Style Chicken Skewers
- 1 Mediterranean Salad Kit
- ⅓ cup English cucumber, diced
- ⅓ cup grape tomatoes, halved
- ½ cup Feta Cheese, plus more for garnish
- 1 (6.5 oz) packet Seeds of Change Quinoa and Brown Rice Mix
- Stonefire Naan, for serving
Instructions
- Pre-heat oven or grill to 425 degrees F. Line sheet tray and cook chicken skewers according to package directions. Remove from oven or grill and roughly chop.
- Toss Mediterranean Salad Kit in a large mixing bowl. Top with cucumber, tomatoes, and feta cheese and toss to combine.
- Heat quinoa and rice packet according to package directions then add to mixing bowl along with roughly chopped chicken kebabs.
- Garnish with additional feta cheese, if desired.
