What a busy time and stressful few weeks we've had. All my virtual teacher Moms raise your hands! I rounded up some of my simplest and most comforting quick dinners for your family this week, including my family favorite Almond Apple Pie. Who says you need to have a holiday meal to enjoy a cozy pie?! I've loved seeing the posts of you guys following along with these meal plans. Thank you for making my smile through all of the craziness, it helps so much.

- SNACK: S’mores Granola Bites

TUESDAY: Pesto Fusilli
My favorite kind of pasta to toss fresh pesto with is fusilli – I can easily find it at my grocery store here, but obviously, you can use any type of pasta. For the final touch, I like adding some crisped pancetta and a little more Parmesan...because why not?! One of the best things about pesto is the fact that the flavors are dynamic enough that you really don’t need much else. In my opinion, this makes it an ideal weeknight meal.

WEDNESDAY: Creamy Spinach Mushroom Gnocchi
We’ve been making this one-skillet Creamy Mushroom Spinach Gnocchi on repeat for literally the last year. Soft, pillowy, gnocchi is what pasta dreams are made of. Everyone in the family loves gnocchi and I can now swing by my Trader Joe’s and pick up the ingredients for this dish with my eyes closed.

THURSDAY: Thai Coconut Ramen
Resorting to ramen for a quick meal doesn’t have to be a sad cliché anymore. With the addition of some healthy toppings and a tasty broth, you can really transform this stereotypical college kid meal into an impressive weeknight dinner.

THURSDAY: Almond Apple Pie
The ingredient that really makes this pie sing is almond paste. I love the combination of apple and almond flavors so much. By rolling a thin layer of almond paste of top of the bottom crust you create a perfect flavor pairing with apple and almond in every bite. It adds the perfect amount of nuttiness without being overpowering.

What more is there to say? These easy granola bites are a hit with the whole family but make sure to put a few aside right when they're ready because the kiddos will gobble them up!
