Leveling Up Lunch with Alexia® Foods

Time to Swap Out that Sad Sandwich

If you’re anything like me, your default when it comes to lunch is a sandwich with a handful of chips (likely from the bottom of the bag). It’s not terribly satisfying and it’s not all that healthy either! I’ve been trying to level up my lunches lately with better ingredients while not having to sacrifice time or flavor. I was THRILLED when Alexia®  Foods reached out about a new product they were launching and asked me to incorporate it into a lunch recipe.

A New Take on Lunch

There’s no better pick me up on a long workday than a wholesome and hearty deskside lunch. This delicious bowl can be pulled together in merely minutes with my air fryer– so satisfying! Don’t have the time to make it? Instead of begrudgingly throwing together chips with a sandwich, I’ve subbed in the new Alexia® Roasted & Ready™ Baby Sunrise Potatoes with Rosemary & Garlic to make a big bowl with leafy greens, chicken sausage, tossed with a zingy lemon vinaigrette and finished with diced Honey Crisp apple. Who says that roasted potatoes are only for dinner?!

Potato PERFECTION

While I’ve loved incorporating these potatoes into my lunchtime routine, I’m also finding that they’re an amazing time saver when it comes to side dishes for dinner. I can prep them in my air fryer, microwave, or oven and the seasoning is out of this world. Alexia® frozen Sweet Potato Fries have been popular at our house for years, but these potatoes might just become our new favorite family side dish with dinner. I can’t recommend grabbing a few bags of these new potatoes enough. They make meals come together so quickly and easily! They’ve definitely earned a spot on our regular dinner rotation. Potato, Sausage + Greens Bowl

Description

It’s amazing just how easy it is to pull together a hearty and wholesome lunch at your desk! 


Ingredients

Lemon Vinaigrette

    • Juice and zest from 1 lemon
    • 1/4 cup olive oil
    • 1/2 teaspoon Dijon mustard
    • 1/4 teaspoon kosher salt
    • 1/2 teaspoon cracked black pepper

Instructions

  1. Pre-heat the air fryer to 390° F.
  2. Fill the air fryer basket with half of the bag of the potatoes and the sliced chicken sausage. If desired, spritz or drizzle with oil for extra crispiness. Cook for 15 minutes , sliding out the basket and shaking halfway through to observe. Potatoes and sausage should be crispy and cooked all the way through
  3. In the meantime, add your greens to a big bowl. Then assemble lemon vinaigrette by adding all of the ingredients into a mason jar, securing the lid and shaking until fully combined. Drizzle over greens.
  4. Once the potatoes and sausage are done, scatter them over the greens and toss. Finish by evenly sprinkling the Honeycrisp apple over the top. Divide into 2 bowls and enjoy.

  • Don’t overcrowd the air fryer basket to obtain full crispiness.
