Ingredients

  • 1 cup English cucumber roughly chopped
  • 1 cup grape tomatoes
  • ½ red onion roughly chopped
  • ¼ cup pitted Kalamata olives
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil 
  • ½ teaspoon Greek Seasoning
  • ¼ cup crumbled feta cheese
  • salt to taste
  • pepper to taste
  • pita chips for serving

Instructions

  • In the bowl of a small food processor or blender, add the 1 cup cucumber, 1 cup tomatoes, ½ cup red onion, ¼ cup olives, 2 tablespoons red wine vinegar, 1 tablespoon olive oil, and ½ teaspoon greek seasoning. 
  • Pulse until desired texture is reached. Season to taste with salt and pepper.
  • Sprinkle with feta. Serve as a relish to chicken or fish or serve as an appetizer with pita chips.
