Greek Relish

  • Author: Kelsey Nixon

Refreshing and perfect for any party or gathering — unique flavors and fresh ingredients (plus it’s quick to make ahead of time!)

  • 1 cup English cucumber, roughly chopped

  • 1 cup grape tomatoes

  • 1/2 red onion, roughly chopped

  • 1/4 cup pitted Kalamata olives

  • 2 tablespoons red wine vinegar

  • 1 tablespoon olive oil

  • ½ teaspoon Greek Seasoning

  • salt and pepper to taste

  • 1/4 cup crumbled feta cheese

  • pita chips, for serving

  1. In the bowl of a small food processor or blender, add the cucumber, tomatoes, onion, olives, vinegar, olive oil, and greek seasoning.

  2. Pulse until desired texture is reached. Season to taste with salt and pepper.

  3. Sprinkle with feta. Serve as a relish to chicken or fish or serve as an appetizer with pita chips.

Consider making this relish ahead of time to assist with meal prep. I usually make a big batch of it and store it in the fridge for a couple of days so that I can use it here and there. If you plan to do this as well, leave off the feta and sprinkle it on top as you eat it. The veggies will give off some liquid the longer it sits so just pour that off before enjoying.
