Ingredients

  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • ¼ cup molasses
  • 2 ½ cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • 1 cup granulated sugar to roll the dough balls in

Instructions

  • Preheat the oven to 350°F. Line a sheet tray with parchment paper.
  • In a large mixing bowl, beat ¾ cup unsalted butter and 1 cup granulated sugar until light and fluffy, approximately 2-3 minutes with an electric mixer.
  • Next, add 1 large egg and ¼ cup molasses and mix well.
  • In a separate mixing bowl, combine 2 ½ cups flour, 2 teaspoons baking soda, ½ teaspoon salt, 2 teaspoons ground cinnamon, and ½ teaspoon ginger, whisking to combine.
  • Slowly add dry ingredients to wet ingredients and mix until well combined.
  • Using a cookie scoop, scoop balls of dough that are golf ball sized. Transfer dough balls to a small bowl with 1 cup granulated sugar and roll to fully coat.
  • Transfer to a lined sheet tray and space approximately 2” to 3” apart to allow room for cookies to spread.
  • Bake for 10-12 minutes then remove from oven and allow cookies to cool on sheet tray for approximately ten minutes before transferring to a wire rack to finish cooling.

SERVING SUGGESTIONS:

  • Serve with cold milk.

SWAP SUGGESTIONS:

  • Flour: You can use 1/2 cup of whole wheat flour with similar results – any more and the cookies with be drier and grittier.

MAKE AHEAD / WEEKEND PREP:

  • You can easily freeze this dough – scoop the rounds on a baking sheet, place the sheet in the freezer for 2 hours, then place the dough rounds in a ziplock bag and store in the freezer. Bake at the same temp – they may or may not need an extra minute or 2 – your preference!
