ghostly grilled ham and cheese

Ingredients

  • 4 tablespoons unsalted butter, softened
  • 8 slices white sandwich bread
  • ½ cup grated Parmesan cheese
  • ½ lb. sliced Swiss or Gruyère cheese
  • ½ lb. thinly sliced ham
  • dill pickle slices (optional)
  • 2 tablespoons whole grain mustard
  • sliced black olives (optional)

Instructions

  • Preheat a griddle or large skillet over medium heat.
  • Spread 4 tablespoons butter on both sides of 8 slices bread. Sprinkle with ½ cup grated Parmesan, pressing to help stick. Flip slices over onto a work surface, Parmesan side down. Top 4 slices with ½ lb. cheese, ½ lb. sliced ham and dill pickle slices. Spread 2 tablespoon mustard on the remaining 4 slices bread.
  • Close the sandwiches and transfer preheated griddle. Cook over medium heat, turning, until golden and crisp on the outside and melted on the inside, about 3 minutes.
  • Using a ghost or tulip shaped cookie cutter, press the shape into the sandwich. Finish by adding sliced olives as eyes.
