Fruit & Nut Bars

  • ¼ cup coconut oil, melted
  • ¼ cup honey
  • ¼ cup peanut butter
  • 1 cup old-fashioned oats
  • 1 cup quick cooking oats
  • ⅔ cup dried cranberries
  • ⅔ cup pepitas
  • ⅔ cup sliced almonds
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • ½ cup applesauce
  • 2 large eggs


Preheat oven to 325 degrees F. In a small saucepan melt the coconut oil, honey, and peanut butter over low heat until smooth and combined.

In a large bowl combine the oats, cranberries, pepitas, almonds, cinnamon and salt. Add applesauce, eggs and warmed honey mixture. Stir until fully incorporated.

Transfer to a greased 8x8" baking dish and spread evenly. Bake for 20 minutes until edges are golden brown. Cool before cutting into bars.
