Ingredients

Chile Lime Eggs

  • Hard Boiled Eggs, halved
  • Chile Lime Seasoning (I get this at Trader Joes)
  • Fresh lime and cilantro
  • Whole wheat tortillas, for serving

Avo-Egg Toast

  • 1 hard boiled egg, diced
  • 1/2 avocado, diced
  • kosher salt & cracked black pepper
  • Lemon wedge
  • hot sauce, for serving
  • Whole wheat toast, buttered

Bacon, Egg, Tomato

  • 1 english muffin, toasted
  • 2 slices crisped bacon
  • 1 hard boiled egg, sliced
  • 2 slices avocado
  • 1 slice tomato
  • 2 tablespoons shredded mozzarella

Instructions

Chile Lime Eggs

Halve hard boiled eggs and sprinkle with chile lime seasoning. Squeeze fresh lime over eggs and top with cilantro, if desired. Serve alongside toasted whole wheat tortillas.

Avo-Egg Toast

Combine diced egg and avocado together; season to taste with salt and pepper and a squeeze of fresh lemon.  Spread avo-egg mixture on top of toast. Drizzle with hot sauce, if desired.

Bacon, Egg, Tomato

Assemble sliced bacon, egg, avocado, and tomato on top of toasted english muffin. Sprinkle with mozzarella cheese and melt under the broiler. Top with chopped parsley, if desired.
