Eggs are the perfect foundation to any meal. They are inexpensive, high protein, and delicious! Here are 3 of my favorite ways to transform hardboiled eggs for breakfast.

How many ways can you dress up eggs?!

Thanks to my recent Instant Pot purchase, we are swimming in hard boiled eggs! Such a great option for breakfast and for snacking throughout the day, but I’ve been anxious to find some new ways to enjoy them. Here are 3 different combos for making the most of your hard boiled egg mornings.

Eggs are the perfect foundation to any meal. They are inexpensive, high protein, and delicious! Of course, these 3 recipes are not the only options for dressing up your hard boiled eggs. Switch up the carbs by subbing a bagel or croissant for toast, or a spinach wrap for a tortilla. The combinations are truly endless!

The Most Important Meal of the Day

I am a huge advocate for eating together as a family whenever possible! Breakfast, the most important meal of the day, is no exception. Most mornings don’t include elaborate displays of smoothie bowls or challah French toast, but the goal is simply to break bread together as a family before we all go our separate directions. Eggs 3 Ways

Ingredients

Chile Lime Eggs

  • Hard Boiled Eggs, halved
  • Chile Lime Seasoning (I get this at Trader Joes)
  • Fresh lime and cilantro
  • Whole wheat tortillas, for serving

Avo-Egg Toast

  • 1 hard boiled egg, diced
  • 1/2 avocado, diced
  • kosher salt & cracked black pepper
  • Lemon wedge
  • hot sauce, for serving
  • Whole wheat toast, buttered

Bacon, Egg, Tomato

  • 1 english muffin, toasted
  • 2 slices crisped bacon
  • 1 hard boiled egg, sliced
  • 2 slices avocado
  • 1 slice tomato
  • 2 tablespoons shredded mozzarella

Instructions

Chile Lime Eggs

Halve hard boiled eggs and sprinkle with chile lime seasoning. Squeeze fresh lime over eggs and top with cilantro, if desired. Serve alongside toasted whole wheat tortillas.

Avo-Egg Toast

Combine diced egg and avocado together; season to taste with salt and pepper and a squeeze of fresh lemon.  Spread avo-egg mixture on top of toast. Drizzle with hot sauce, if desired.

Bacon, Egg, Tomato

Assemble sliced bacon, egg, avocado, and tomato on top of toasted english muffin. Sprinkle with mozzarella cheese and melt under the broiler. Top with chopped parsley, if desired.
