cucumber avocado salad

Ingredients

  • 2 english cucumbers sliced
  • 1 avocado diced
  • cup cilantro chopped
  • 1 lime zest + juice
  • 2 tablespoons olive oil
  • kosher salt
  • black pepper

Instructions

  • In a medium salad bowl, combine 2 sliced cucumbers, 1 diced avocado and ⅓ cup chopped cilantro.
  • Add zest and juice from 1 lime, drizzle with 2 tablespoons olive oil and season with a big pinch of salt and pepper, adjusting as necessary to taste.
  • Toss salad to coat with dressing and serve.

SERVING SUGGESTIONS

  • Serve with a rotisserie chicken or apple cheddar bacon grilled cheese sandwiches.

  • Swap cilantro with ⅓ cup chopped Italian Parsley or scallions/green onions.
