cucumber avocado salad

Ingredients
- 2 english cucumbers sliced
- 1 avocado diced
- ⅓ cup cilantro chopped
- 1 lime zest + juice
- 2 tablespoons olive oil
- kosher salt
- black pepper
Instructions
- In a medium salad bowl, combine 2 sliced cucumbers, 1 diced avocado and ⅓ cup chopped cilantro.
- Add zest and juice from 1 lime, drizzle with 2 tablespoons olive oil and season with a big pinch of salt and pepper, adjusting as necessary to taste.
- Toss salad to coat with dressing and serve.

- Serve with a rotisserie chicken or apple cheddar bacon grilled cheese sandwiches.
