A simple Creamy Tomato Feta Soup to make with just a few basic pantry ingredients! This soup is elevated with rich, savory feta cheese for a unique twist on a comforting favorite.

Tomato Soup with a Twist

Creamy tomato soup is one of my all time favorites. This updated take on tomato soup has all of the traditional flavors of tomato soup with the addition of feta cheese and a healthy dose of basil. Those additions really bring a mediterranean feel to the dish that is SO GOOD. It’s creamy meets comfortable in a bowl with a dash of personality.

Feelings about Feta

I love the addition of the feta cheese in this soup, but keep in mind…it doesn’t melt, it just provides a nice texture.  The soup itself has a really creamy and velvety texture, and adding the feta is more for flavor than anything else. I like mixing in some of the feta into the actual soup just before serving along with a small handful of feta on top. The other huge contributor to flavor here is the pesto that’s swirled in.

Immersion Blender Love

When I finally invested in a good immersion blender, I started making soup like a crazy person! If it could be blended in a big pot, I was there for it. I really love my Braun Multiquick Immersion Blender. (you can read my full review here) I’ve had a few different immersion blenders over the years and this one is by far my favorite. Gone are the days of feeling like I need to transfer hot soup to a big blender to get that smooth texture.

A Valentine’s Day Twist

If you’re not opposed to doubling up on cheese (NEVER), We love this soup served with crispy grilled cheese hearts to celebrate Valentine’s Day. I like making our grilled cheese sandwiches on a sheet pan in the oven and have found that if you want to do them in any sort of shape, you should cut out the shape first, then top with cheese. Rather than making the whole sandwich and pressing the shape in afterwards. I also like that this sheet pan method makes it so all of your grilled cheese sandwiches finish at the same time!

Creamy Tomato Feta Soup

A simple Creamy Tomato Feta Soup to make with just a few basic pantry ingredients! This soup is elevated with rich, savory feta cheese for a unique twist on a comforting favorite.


Ingredients

  • 3 tablespoons extra-virgin olive oil

  • 1 medium yellow onion, chopped

  • 3 garlic cloves, minced

  • 1 (28-ounce) can whole tomatoes

  • 2 1/2 cups low sodium chicken broth

  • 2 tablespoons pesto, store bought or homemade

  • 2 tablespoons honey or sugar (optional)

  • ½ cup crumbled feta cheese, plus more for garnish

  • ¼ cup plain Greek yogurt

  • Kosher salt and cracked black pepper


Instructions

  1. For the soup, in a large saucepan or Dutch oven set over medium-high heat, heat 2 tablespoons of the olive oil. Add the onion and garlic. Cook, stirring frequently until translucent and fragrant, about 3 minutes. Add the tomatoes and their juice, chicken broth, pesto, and honey or sugar, if using. Bring the soup to a simmer and cook for 5 minutes.

 

  1. Using an immersion blender, blend the soup until smooth. (Alternatively, puree the soup in batches in a standard blender.) Stir in the feta cheese and bring the soup just to a simmer and cook for 10 more minutes. Remove from the heat and stir in the Greek yogurt and season to taste with salt and pepper. 

  2. To serve, pour the soup into individual bowls and garnish with additional feta if desired. The soup will keep in an airtight container in the refrigerator for up to 3 days.
