Chopped Cobb Salad

A chopped up and simple take on one of the best salads of all time! This Cobb Salad is a fresh and fun option for weeknight dinner.

Chop it Up

When I was going to culinary school in Los Angeles, I fell in love with a place called Toast. They serve the most delicious salads I’ve ever had! They had a variety to choose from; many of them were served chopped. As a culinary student, I was in a frame of mind to really appreciate knife work. I swear that having everything in those big salad bowls be uniform in size makes it all taste even better. You can get a combination of all of the salad components in one bite! Definitely a secret to success.

A Cobb Classic

Cobb salad is a classic, and serving it chopped and tossed in homemade buttermilk blue cheese dressing ensures that every bite is balanced taste-wise and still retains its beautiful texture and crunch. And with the added protein from the roasted turkey, crispy bacon, and hard-boiled eggs, it’s also hearty enough to make a meal. 

Knife Skills

One important hurdle when it comes to being a home chef is finding and mastering your knives! Purchasing knives in a set can get very expensive and the majority of those knives may never make it out of the knife block; I tend to use just a few knives over and over. My tip for this, is to make sure you get a great chef’s knife, a serrated knife, and a parring knife. With these three you will be able to chop, slice, and cut up just about anything you will encounter in your weeknight kitchen. Chopped Cobb Salad

Ingredients

Scale
  • 1/2 head romaine lettuce, cut into ½-inch pieces 
  • 1/2 head Boston lettuce, cut into ½-inch pieces 
  • 8 ounces roasted turkey breast, chopped into ½-inch cubes (about 2 cups)
  • 6 bacon slices, cooked and crumbled
  • 2 avocados, cut into 1/2-inch cubes
  • 4 vine-ripened tomatoes, seeded and cut into ½-inch cubes
  • 3/4 cup crumbled blue cheese 
  • 2 large hard-boiled eggs, cut into ½-inch cubes
  • Buttermilk Blue Cheese Dressing
  • 1/4 cup finely chopped fresh chives

Instructions

In a large bowl, combine the lettuces and toss with turkey, bacon, avocado, tomatoes, blue cheese, and eggs. Just before serving, pour the dressing over the salad and toss. Garnish with fresh chives.
