carnie’s lemon ricotta cookies

Ingredients

  • 4 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon kosher salt
  • pinch ground cardamom optional
  • 1 cup unsalted butter softened (2 sticks)
  • 2 cups granulated sugar
  • 2 large eggs
  • 15 ounces ricotta cheese
  • 1 tablespoon vanilla extract (or vanilla bean paste)
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon lemon extract

FOR THE GLAZE

  • 2 cups powdered sugar
  • ¼ cup half and half or milk, plus more as needed
  • 2 tablespoons marshmallow fluff
  • ½ teaspoon vanilla extract (or vanilla bean paste)

Instructions

  • Preheat oven to 350*.
  • In a large mixing bowl, whisk 4 cups of flour, 2 tablespoon baking powder, 1 teaspoon kosher salt and a pinch of cardamon together. Set aside.
  • In a separate mixing bowl, cream 1 cup butter and 2 cups sugar together until light and fluffy. Add 2 large eggs, one at a time, until fully combined. Add 15 ounces ricotta, 1 tablespoon vanilla, 1 teaspoon lemon juice and 1⁄2 teaspoon lemon extract, and mix until combined.
  • Add the flour mixture to the wet mixture and mix just until combined.
  • Using a small cookie scoop or heaping tablespoons, onto a parchment lined baking sheet, about 2 inches apart.
  • Bake for 10-13 minutes or until bottoms are light and golden brown. Tops should be soft, but not raw. Do not over bake.
  • While cookies are baking, combine 2 cups powder sugar, 1⁄4 cup half and half or milk, 2 tablespoon marshmallow fluff and 1⁄2 teaspoon vanilla extract. Whisk until fully combined.
  • Let cookies cool completely then drizzle or dip into glaze. Decorate with sprinkles or lemon zest before glaze hardens.
  • Store in airtight container for 3 days or in fridge for up to 5 days.
