This week officially kicks off fall, and I don’t know about you, but I’m ready to trade pool days for cozy dinners and sweater weather.🍂 (although it’s still warm where I’m at!)
One of my favorite parts of the transitioning seasons is how it shows up in the kitchen. Think warm grains, roasted veggies, and meals that simmer while life happens. I’m especially excited about the new 5 Ingredient Boursin Baked Pasta and the Brown Sugar Glazed Salmon with Roasted Broccolini both in this week’s meal plan.
If you don’t want to make any dinner decisions, but want to get into a better dinner rhythm, just follow my plan! Try the first 2 weeks free (use code: FREEDINNER) and come cook with me in Recipe Club!
Happy Cooking!

Teriyaki Chicken Stir-Fry
A 5 Ingredient weeknight favorite that comes together in under 20 minutes and is full of flavor and veggies.
Buffalo Chicken Bowls with Cauliflower Rice
Buffalo chicken with a “kick”, fluffy rice & cauliflower combo, fresh cucumbers & tomatoes, finished with a drizzle of creamy blue cheese dressing.
Brown Sugar Glazed Salmon with Broccolini
This is my favorite way to make salmon and it couldn’t be easier. The sweet and tangy glaze compliments the salmon perfectly and the roasted broccolini is the perfect side.
Boursin Baked Pasta
The easiest weeknight pasta dish with baked Boursin at the center of it. Tomatoes, fresh basil, garlic, spinach, and Parmesan to complete this super simple dinner.
Salsa Verde Shredded Beef Tacos
A slow cooker recipe that you’ll want to save because it’s full of flavor and SO EASY to make. It’s a great recipe to rely on if you’re feeding a big group. Great for tacos or burrito bowls.
Skillet Chocolate Chip Cookie
A GIANT chocolate chip cookie with crispy edges and a soft center topped with vanilla ice cream. Grab a spoon and dig in or slice it like a pizza and serve.
