beef and farro soup

  • 1 tablespoon olive oil
  • 1 (14.5 oz) package mirepoix mix
  • kosher salt and cracked black pepper
  • 1 lb. ground beef
  • 1 (14.5 oz) can diced or stewed tomatoes
  • 4 cups low-sodium beef broth
  • 1 (8.8 oz) bag 10 minute farro


  • chopped Italian parsley, for garnish
  • freshly grated Parmesan, for garnish


  • In a large Dutch oven or soup pot, heat 1 tablespoon oil over medium-high heat. Add 1 lb. ground beef and season with a big pinch of salt and pepper. Break up the meat with a spoon and cook until browned. Remove from pot and transfer to a plate.
  • To the same pot, add Mirepoix Mix and season with a pinch salt and pepper. Sauté veggies until soft, about 3 minutes.
  • Add 1 can tomatoes to the pot along with the 4 cups broth. Bring to a boil, then reduce to a simmer and cook for 15 minutes to allow the flavors to develop.
  • Return the browned beef to the pot and add 1 bag 10 Minute Farro, cook for an additional 10 minutes.
  • Taste and adjust seasoning with an additional pinch salt and pepper before serving.
  • Optional garnishes include chopped Italian parsley and grated Parmesan.


  • Serve with a simple green salad and crusty bread to complete this meal.


  • Protein: Swap ground beef for ground Italian sausage.
  • Vegetarian: Omit ground beef for 1 lb. cauliflower rice or diced mushrooms. Swap beef broth for vegetable broth.
  • Gluten-Free: Swap farro for rice or quinoa. Adjust cooking time according to package directions.
  • Mirepoix: The Trader Joe’s Mirepoix Mix can be swapped for ½ onion, 3 carrots, and 3 stalk celery, all finely diced.
  • Broth: Swap beef broth for chicken broth.
