BBQ Pulled pork sliders

  • 1 (32 oz.) container smoked shredded pork (I like Kirkland brand from Costco)
  • 1 cup BBQ sauce (I like Sweet Baby Ray's)
  • 1 package Hawaiian rolls (12-16 rolls), sliced horizontally
  • 1 (12 oz.) bag kale salad/slaw mix
  • ½ cup diced pickles (I like Grillos)

Optional Extras

  • red onion, thinly sliced


  • Follow package directions to heat 32 oz. smoked shredded pork with 1 cup BBQ sauce; bring to a simmer and toss to fully combine.
  • To assemble, evenly spoon warmed pulled pork between 12-16 Hawaiian rolls (you may have extra pulled pork you can use for leftovers). Separate dressing package from a 12 oz bag shredded kale/slaw. Top rolls with a handful undressed slaw. Toss the remaining slaw together with the dressing in a medium bowl and serve on the side.
  • Finally, evenly top sliders with ½ cup diced pickles and sliced red onion, if desired. Serve warm.


  • Serve the sliders with the rest of the mixed salad kit, grilled corn, chips, and fresh fruit like watermelon or grapes to complete this meal.


  • Protein: Swap the shredded pork for shredded beef or chicken. 
  • Vegetarian: Omit the pork and sauté sliced portobello mushrooms until tender. Toss with BBQ sauce.
  • Gluten-Free:  Purchase gluten-free rolls or omit rolls and serve over slaw.
  • Rolls: Swap small slider rolls for full size rolls.
  • Slaw/ Salad: Swap the salad mix for green leaf lettuce.
  • Pickles: Swap pickles for sliced pepperoncinis.
