bacon cheddar scallion strata

  • 8 slices bacon
  • 1 tablespoon butter, softened for brushing
  • 3 cups corn kernels, fresh, frozen or canned
  • 1 ½ cups thinly sliced scallions (from 1 large bunch)
  • 9 cups french bread, cut into 1-inch cubes
  • 2 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 9 large eggs
  • 2 tablespoons mayonnaise
  • 2 ¾ cup milk
  • 2 teaspoons kosher salt
  • ½ teaspoon cracked black pepper


  • In a large skillet over medium-high heat, add 8 slices bacon and cook, until crisp. Remove to a paper towel lined plate to cool. After cooling crumble bacon.
  • Grease a 9×13-inch baking dish with 1 tablespoon butter. Toss crumbled bacon, 3 cups corn and 1 ½ cups sliced scallions together in a medium bowl. Combine 2 cups shredded cheddar with 1 cup grated Parmesan in another bowl. In third large bowl, whisk together 9 eggs and 2 tablespoons mayonnaise, then whisk in 2 ¾ cups milk, 2 teaspoons salt and ½ teaspoon pepper.
  • Spread 3 cups bread cubes in prepared baking dish. Note: it will not fully cover bottom of dish; this is fine. Add ⅓ bacon & corn mixture, then ⅓ cheese mixture. Repeat layering twice with remaining bread, corn and cheese. Pour egg mixture evenly over strata. Cover with plastic wrap and refrigerate for at least 4 hours or up to 1 day.
  • When ready to bake, preheat oven to 350°F. Bake strata, uncovered, until puffed, golden brown and cooked through, about 45 to 55 minutes. Let stand 5 minutes before serving.


  • Serve with fresh fruit and a side green salad to complete this meal.


  • Protein: Swap bacon for 1 lb. cooked and crumbled sausage.
  • Vegetarian: Replace bacon with 1 pint cherry tomatoes.
  • Gluten-Free: Use gluten-free bread.
  • Scallions: Swap scallions for chives.
  • Cheese:  Swap shredded cheddar for mozzarella or Gruyere.


  • Strata can be built up to 1 day in advance and stored in the refrigerator wrapped in plastic wrap before baking.
  • Baked strata can be wrapped in plastic wrap and stored in the freezer for up to 1 month.
