Asian cashew crunch salad

Ingredients

FOR THE SALAD

  • ¼ head green cabbage, finely shredded (about 3 cups)
  • ¼ head red cabbage, finely shredded (about 3 cups)
  • 2 cups shredded carrots
  • 2 cups shelled edamame
  • 1 cup fresh cilantro, chopped
  • ½ cup sliced scallions
  • 2 avocados, diced
  • 1 cup unsalted cashews
  • 2 cups crunchy chow mein noodles
  • 2 cups shredded chicken or cooked shrimp

DRESSING

  • ¼ cup avocado or grapeseed oil
  • ¼ cup rice wine vinegar
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1 clove garlic, minced
  • ¼ cup Greek yogurt or mayo

Instructions

  • In an extra large mixing bowl combine 6 cups shredded cabbages, 2 cups shredded carrots, 2 cups edamame, 1 cup chopped cilantro, ½ cup sliced scallions, 2 diced avocados, 1 cup cashews, 2 cups chow mein noodles, and 2 cups chicken.
  • Using tongs, toss  all of the salad ingredients together to fully combine. Make dressing.
  • For the dressing: In a large mason jar, add ¼ cup oil, ¼ cup rice vinegar, 2 tablespoons sesame oil, 2 tablespoons sugar, 1 teaspoon salt, 1 clove minced garlic, and ¼ cup yogurt. Shake the jar until dressing is smooth.
  • Drizzle tossed salad with dressing and serve.

SERVING SUGGESTIONS

  • Serve with potstickers to complete this meal.

SWAP SUGGESTIONS

  • Protein: Swap chicken or shrimp for grilled steak or pork tenderloin.
  • Vegetarian: Remove chicken or shrimp from the recipe. Add 1 can beans.
  • Gluten-Free: Remove the chow mein noodles.
  • Vegan/Dairy-Free: Remove yogurt or mayo from the dressing. It will be a bit thinner, more like a vinaigrette.

MAKE AHEAD

  • Prep the cabbage, cilantro, and scallions; store in an airtight container in the refrigerator for up to 3 days.
  • Cook chicken or shrimp in advance and store in an airtight container in the refrigerator for up to 3 days.
  • Make dressing in advance and store in a sealed mason jar in the refrigerator for up to 5 days.
